Ditch the bread and stack your favourite breakfast sandwich fillings between two savoury turkey patties. These turkey patties are only 2 ingredients and cook quickly, making them an easy high protein meal over the campstove or campfire. Perfectly delicious for breakfast, lunch, or dinner!

Turkey Stackwich Ingredients
Before you go running to the store, let me give you the inside scoop on the key ingredients:
Native to: North America

I choose lean ground turkey for a lighter protein option (helps balance out the cheese and bacon—gotta make some compromises, right?). However, you’re welcome to use any type of ground turkey you prefer.
Top 3 nutrients: fiber, healthy fats, antioxidants
You know everything bagels? Well it’s all of that flavour minus the bagel… Sesame seeds, sea salt, dried minced garlic, dried minced onion, black sesame seeds and poppy seeds. You can buy this mix pre-made at most grocery stores, or make your own.Â
Native to: world-wide (*domesticated)
Top 3 nutrients: protein, vitamin B12, choline
Avocado, sunflower, canola and grapeseed have mellow flavours and hold the best heat allowance.Â

Cheddar cheese adds a nice sharp flavour, but feel free to substitute with any hard cheese of your choice.

Roma? Heirloom? Beefsteak? Any tomato will do!

Feel free to use regular or baby spinach. Baby spinach has a milder, sweeter flavour and more tender leaves, whereas regular spinach has a firmer texture and bolder flavour.
You can also use lettuce or any green you prefer.

- Hash browns or fried potatoes – Well, of course – potatoes are the timeless sidekick!
- Fresh fruit  – Fresh fruit is a nice balance to the savoury richness of the sandwich
- Avocado slices – Creamy avocado adds a healthy, buttery texture (also fantastic on the sandwich)
- Yogurt with honey and nuts – A light and protein-packed side with a touch of sweetness

Can these be cooked directly on the grill?
I wouldn’t recommend it. The patties are so thin that even a little sticking could spell disaster… in other words, you’ll likely lose your turkey to the grill.
Can I use a ground chicken instead of turkey?
Totally! I simply prefer the flavour and texture of cooked ground turkey.Â
Can I use turkey or chicken bacon?
The world is your oyster when it comes to bacon choices. However, pork bacon offers a unique flavor contrast that you won’t find with turkey or chicken bacon.
Can I use a different seasoning or spice mix?
Sure you can! However, I must say that “Everything but the Bagel” truly shines for this breakfast sandwich. If you choose an alternate spice, keep in mind that you might need to adjust the quantity to suit your taste.
Can I make sandwiches ahead of time?
Yes, but these are best served warm. They reheat well, but:
- Lean turkey can become dried when overcooked; I suggest wrapping the sandwiches in foil before reheating to contain the moisture
- Some ingredients, like lettuce or tomatoes, may become soggy. Consider storing these separately and adding them when ready to eat
Can I freeze the turkey patties?
Absolutely. I recommend freezing them on a parchment lined baking sheet. Once frozen you can stack them in a container. Ensure to separate and thaw before cooking.Â

Notable Equipment
- 1 cast-iron pan or frying pan
- 1 mixing bowl
- 1 mixing spoon
- 1 spatula
Ingredients
For the turkey patties:
- 450 g ground turkey
- 2 tbsps Everything but the Bagel Seasoning (spice mix)
- cooking oil (to prevent sticking on the pan)
Suggested toppings/fillings:
- fried egg
- bacon
- cheese
- red onion
- tomato
- spinach or lettuce
- condiments (mustard, mayo, hot sauce, etc.)
Instructions
Prepare Toppings
- 1. Slice cheese and vegetable toppings
- 2. Cook bacon. When done, pour grease into a heat safe container. Leave some grease on the pan for cooking the patties and your egg. Tip: Keep it close by incase you need more oil to re-grease the pan while you cook your patties
- 3. You can cook your egg(s) now OR wait until after you cook the patties (this will depend on how you prefer your egg)
Prepare & Cook Turkey Patties
- 4. In a mixing bowl, combine ground turkey with Everything but the Bagel seasoning and gently mix to combine
- 5. Divide and roll mixture into 8 even sized balls (approx 1/4 cup each). Tip: lightly coat your hands with oil to prevent the meat from sticking to your hands
- 6. Flatten into thin patties (⅛ - ¼" thick, approx 3" diameter). Note: As they cook they will shrink in diameter and slightly thicken
- 7. Place a frying pan over medium-high heat and allow it to preheat for about 2-3 minutes. This ensures the pan is hot enough to sear the meat.
- 8. Add a small amount of cooking oil to the pan. Swirl it around to coat the bottom evenly (skip if your pan is already lightly coated in bacon grease)
- 9. Gently place as many patties you can fit in the hot pan (without them overlapping)
- 10. Cook the patties for 2-3 minutes on the first side without moving them. This allows it to develop a nice sear.
- 11. Flip the patties using a spatula and cook the other side for an additional 2-3 minutes. (Optional: after flipping the patties, place cheese on top to let it melt)
- 12. Remove the patties from the pan and let them rest on a plate for about 2 minutes. This helps the juices redistribute throughout the meat.
- Repeat steps 9 to 12 until all patties are cooked
- 13. Optional: while the cooked patties are resting, cook your egg(s) to your preferred doneness.
