Ditch the bread and stack your favourite breakfast sandwich toppings between two savoury turkey patties. These turkey patties are only 2 ingredients and cook quickly, making them an easy high protein meal over the campstove or campfire. Perfectly delicious for breakfast, lunch, or dinner!
2tbspsEverything but the Bagel Seasoning (spice mix)
cooking oil (to prevent sticking on the pan)
Suggested toppings/fillings:
fried egg
bacon
cheese
red onion
tomato
spinach or lettuce
condiments (mustard, mayo, hot sauce, etc.)
Instructions
Prepare Toppings
1. Slice cheese and vegetable toppings
2. Cook bacon. When done, pour grease into a heat safe container. Leave some grease on the pan for cooking the patties and your egg. Tip: Keep it close by incase you need more oil to re-grease the pan while you cook your patties
3. You can cook your egg(s) now OR wait until after you cook the patties (this will depend on how you prefer your egg)
Prepare & Cook Turkey Patties
4. In a mixing bowl, combine ground turkey with Everything but the Bagel seasoning and gently mix to combine
5. Divide and roll mixture into 8 even sized balls (approx 1/4 cup each). Tip: lightly coat your hands with oil to prevent the meat from sticking to your hands
6. Flatten into thin patties (⅛ - ¼" thick, approx 3" diameter). Note: As they cook they will shrink in diameter and slightly thicken
7. Place a frying pan over medium-high heat and allow it to preheat for about 2-3 minutes. This ensures the pan is hot enough to sear the meat.
8. Add a small amount of cooking oil to the pan. Swirl it around to coat the bottom evenly (skip if your pan is already lightly coated in bacon grease)
9. Gently place as many patties you can fit in the hot pan (without them overlapping)
10. Cook the patties for 2-3 minutes on the first side without moving them. This allows it to develop a nice sear.
11. Flip the patties using a spatula and cook the other side for an additional 2-3 minutes. (Optional: after flipping the patties, place cheese on top to let it melt)
12. Remove the patties from the pan and let them rest on a plate for about 2 minutes. This helps the juices redistribute throughout the meat.
Repeat steps 9 to 12 until all patties are cooked
13. Optional: while the cooked patties are resting, cook your egg(s) to your preferred doneness.
