No-Bake Orange & Almond Oat Bars

These soft and chewy bars are crafted from wholesome oats, creamy almond butter, crunchy almonds, sweet raisins, and a burst of zesty orange.

Equipment

  • 8 x 8 baking dish other sizes can work too (see notes)
  • parchment paper
  • zester or fine grater
  • large mixing bowl

Ingredients
  

  • 2 ½ cup rolled oats
  • 1 cup almond butter
  • cup honey
  • cup almonds, slivered or chopped
  • 3 tbsp raisins or dried currants
  • 1 tsp orange zest, from about 1 med navel orange
  • 1 tsp vanilla extract
  • ½ tsp sea salt

Instructions

  • 1. Line bottom of dish with parchment paper
  • 2. Zest orange and set aside
  • 3. In large bowl, stir together the almond butter, honey, vanilla, orange zest and salt, until smooth
  • 4. Add the oats, almonds and raisins and stir to combine
  • 5. Pour mixture into pan and press firmly to compress and bind. *You may cover with more parchment paper and rub your hand or bottom of a glass on the top to help press and smooth the mixture more easily.
  • 6. Chill in fridge for atleast 1 hour then slice into desired bar sizes.

Notes

  • Alternate sizes of baking dishes can work, however, too large of a pan runs the risk of flattening the mix too thin
  • Store in fridge for up to 10 days
