No-Bake Orange & Almond Oat Bars

These soft and chewy bars are crafted from wholesome oats, creamy almond butter, crunchy almonds, sweet raisins, and a burst of zesty orange.

Equipment
- 8 x 8 baking dish other sizes can work too (see notes)
- parchment paper
- zester or fine grater
- large mixing bowl
Ingredients
- 2 ½ cup rolled oats
- 1 cup almond butter
- ⅔ cup honey
- ⅓ cup almonds, slivered or chopped
- 3 tbsp raisins or dried currants
- 1 tsp orange zest, from about 1 med navel orange
- 1 tsp vanilla extract
- ½ tsp sea salt
Instructions
- 2. Zest orange and set aside
- 3. In large bowl, stir together the almond butter, honey, vanilla, orange zest and salt, until smooth
- 4. Add the oats, almonds and raisins and stir to combine
- 5. Pour mixture into pan and press firmly to compress and bind. *You may cover with more parchment paper and rub your hand or bottom of a glass on the top to help press and smooth the mixture more easily.
- 6. Chill in fridge for atleast 1 hour then slice into desired bar sizes.
Notes
- Alternate sizes of baking dishes can work, however, too large of a pan runs the risk of flattening the mix too thin
- Store in fridge for up to 10 days
