8 x 8 baking dish other sizes can work too (see notes)
parchment paper
zester or fine grater
large mixing bowl
Ingredients
2 ½cuprolled oats
1cupalmond butter
⅔cuphoney
⅓cupalmonds,slivered or chopped
3tbspraisins or dried currants
1tsporange zest,from about 1 med navel orange
1tspvanilla extract
½tspsea salt
Instructions
1. Line bottom of dish with parchment paper
2. Zest orange and set aside
3. In large bowl, stir together the almond butter, honey, vanilla, orange zest and salt, until smooth
4. Add the oats, almonds and raisins and stir to combine
5. Pour mixture into pan and press firmly to compress and bind. *You may cover with more parchment paper and rub your hand or bottom of a glass on the top to help press and smooth the mixture more easily.
6. Chill in fridge for atleast 1 hour then slice into desired bar sizes.
Notes
Alternate sizes of baking dishes can work, however, too large of a pan runs the risk of flattening the mix too thin
