Sweet Potato

Native to: South America

Did you know that sweet potatoes and yams are not the same thing? Grocery stores have been guilty using the terms interchangeably, but they’re actually completely different vegetables.  When picking out your sweet potatoes, look for ones with orange flesh and purple or redish skin. 

Lime

Native to: Southeast Asia

Top 3 nutrients: vitamin C, fiber, potassium

Nothing beats the bright and fresh flavour and acidity of freshly squeezed lime juice! Any lime variety you can get your hands on should do. Although fresh squeezed is highly recommended, you can use bottled lime juice if you prefer. 

Cilantro

Native to:Southern Europe, Northern Africa, and Western Asia

Top 3 nutrients: vitamin K, vitamin A, vitamin C

As always, fresh provides the best flavour, however, dried cilantro works too!

Any tips for avoiding burning or sticking on the foil?

Tossing the potatoes in oil is primarily used to help heat and crisp the potatoes. Ensure to lightly coat the foil with oil to prevent sticking. Also make sure to keep an eye on your taters. The cooking time needed will vary. 

Do I have to cook the sweet potatoes in foil?

No, you can totally use other methods. Using foil simply makes for quicker cooking and clean-up. Other cooking methods include boiling and/or frying on a pan or roasting whole on the bbq (chop and sauce up once cooked). 

Or, here’s a cheat: bake the potatoes at home and simply reheat and crisp up over the grill or fire in a cast-iron pan. 

Do I have to peel the sweet potatoes?

Nope! I actually prefer leaving the skins on. In addition to adding a nice texture, sweet potato skins are full of fiber and antioxidants… why put them to waste?

Ingredients
  

  • 4 cups sweet potato, chopped 1 large sweet potato (575g)
  • 3-4 tbsp fresh squeezed lime juice, about 1 lime
  • 2 tbsp vegetable cooking oil,
  • 1 dash salt
  • 1 tbsp finely chopped cilantro, or 1 tsp dried
  • 1/8 tsp cayenne

Instructions

  • 1. Wash, peel (optional) and chop sweet potato into ½" thick cubes or wedges
  • 2. Toss potatoes in about 2 tbsp oil
  • 3. Tear a large piece of foil and lightly coat inside with cooking oil to prevent sticking
  • 4. Place potatoes in the center of one half, then fold the other half over and crimp the edges to seal. To prevent steam from building up and bursting the packet, leave some space for air circulation.
  • 5. Cook on campfire or bbq for 15-20 minutes over medium-high heat (400℉). Potatoes should be soft, with some charred and caramelized edges.

While potatoes are cooking, prepare the vinaigrette:

  • 6. Juice lime into a small bowl or jar
  • 7. Add cilantro, salt, cayenne and stir well to combine
  • 8. Once potatoes are done cooking, toss in vinaigrette to evenly coat
  • Optional: top with a sprinkle of feta cheese
