Fire-grilled Cilantro Lime Sweet Potatoes offer a touch of smokiness, and a burst of fresh, citrusy delight – a fireside dish that transforms any outdoor meal. Pair them with things such as grilled meats, tacos, curries…or simply enjoy them as a standalone side.

Ingredients
  

  • 4 cups sweet potato, chopped 1 large sweet potato (575g)
  • 3-4 tbsp fresh squeezed lime juice, about 1 lime
  • 2 tbsp vegetable cooking oil,
  • 1 dash salt
  • 1 tbsp finely chopped cilantro, or 1 tsp dried
  • 1/8 tsp cayenne

Instructions

  • 1. Wash, peel (optional) and chop sweet potato into ½" thick cubes or wedges
  • 2. Toss potatoes in about 2 tbsp oil
  • 3. Tear a large piece of foil and lightly coat inside with cooking oil to prevent sticking
  • 4. Place potatoes in the center of one half, then fold the other half over and crimp the edges to seal. To prevent steam from building up and bursting the packet, leave some space for air circulation.
  • 5. Cook on campfire or bbq for 15-20 minutes over medium-high heat (400℉). Potatoes should be soft, with some charred and caramelized edges.

While potatoes are cooking, prepare the vinaigrette:

  • 6. Juice lime into a small bowl or jar
  • 7. Add cilantro, salt, cayenne and stir well to combine
  • 8. Once potatoes are done cooking, toss in vinaigrette to evenly coat
  • Optional: top with a sprinkle of feta cheese
