Ingredients
- ¼ cup brewed coffee
- ½ tsp instant coffee or finely ground coffee beans - see notes
- 2 tsp chia seeds
- ¾ tsp sugar, honey, or agave syrup
Instructions
- 1. Combine instant coffee (or grounds) and sugar/sweetener of choice in a bowl. Pour in brewed coffee. Stir until sugar/sweetener has dissolved.
- 2. Add chia seeds. Stir and let sit for at least 15 minutes (a gelatinous mixture will form).
Notes
- Using fine coffee grounds results in a bolder, more bitter coffee taste…but has a slight grainy texture... BUT it has more caffeine. Pick your battles I guess.
- You can make more than 1 serving at once: each serving is 1/4 cup/2 oz. of finished gel.
- I like to pack single servings in 2 oz. GoToobs. Perfect size, packable and has a wide mouth/easy to fill.
- Store gel in the fridge for up to 1 week.
