Creamy Pear & Walnut Brie

Recipe score:

Who said finer dining couldn’t happen in the woods? The sweetness of pears and the acidity of balsamic will have you wanting to gobble down the whole thing yourself. Make sure to pack some crackers or bread to enjoy this creamy concoction.

Prep Time: < 5 mins

Cooking Method: Campfire, grill

Cooking Time: 10 mins

Yield: 4

Ingredients:

  • 1 wheel Brie Cheese (approx 200g)
  • 1 bartlett pear, sliced
  • 2 tbsps walnuts, chopped (optional)
  • 3 tbsps balsamic glaze
  • 2 tbsps brown sugar
  • Crackers or bread, to serve

Directions:

  1. Place brie cheese in centre of cast iron pan or on sheet of foil
  2. Slice pear into 1/4 thick slices. Place on top and around the cheese
  3. Cover cheese and surrounding pears with balsamic glaze
  4. Sprinkle with brown sugar and walnuts
  5. Cook over medium-high heat for approx 10 minutes. If using foil, you’ll need to place on top of a broiler. Don’t wrap the cheese in foil. Cheese will break and start to run when ready; pears will be soft and slightly browned.

Voilà! Your brie cheese is ready to go! Spread over bread or dip in crackers to serve.
