Orange, Strawberry & Banana Fruit Leather

A delicious and nutritious snack that combines the sweet and tangy flavours of oranges and strawberries with the creamy, tropical taste of bananas.

Equipment

  • 1 Dehydrator
  • 1 Blender
  • 4 Fruit leather/liquid dehydrating trays

Ingredients
  

  • 8-10 Strawberries (2 cups sliced)
  • 1 Banana
  • 1 Orange Navel preferred
  • 2 tbsp Honey or Agave Syrup

Instructions

  • 1. Hull strawberries, peel banana and orange (removing as much of the spongy layer of the rind that may be stuck on the fruit as possible)
  • 2. Combine all ingredients in a blender and blend until smooth. You should have 2 cups worth: add more fruit if needed.
  • 3. Pour ½ cup of mixture into middle of dehydrating tray. Tilt tray in circular motions to fully cover tray with a thin layer of mixture.
  • 4. Dehydrate at 135℉ for approx 7 hours. When done, leather should be dry to touch.
  • 5. Once slightly cooled, peel leather off tray and cut into 2" strips (6 per tray). See below for further storage guidelines.

Notes

  • Water content of fruit naturally varies: If the mixture is too thick and does not spread well on tray (spreads in clumps and leaves bare spaces on tray), you may need to add a couple tbsp of water and blend again. 
  • If your leather is cracking once dried, the mixture may have been too thin (or dried too long)
  • You may need to adjust mixture amount per tray depending on your tray size and shape
  • Dehydrating time may vary (the thickness and water content of the mixture, as well as the humidity and altitude of your environment will impact dehydrating time)
  • It's easiest to pull off leather when slightly warm

Storage Guidelines:

  • Layer strips with parchment paper to keep from sticking together (or cut ziploc bags into strips to layer in between; they can be washed and reused!)
  • Keep stored in a sealable bag or container
  • Keep stored in a cool, dry and dark place
  • When dried and stored properly, these should have a shelf life of several months.
