This sweet and savoury quesadilla features mouth-watering bacon, crisp apples, and melted cheddar cheese, sandwiched between two tortillas. It's a perfect way to use up leftover bacon - or a perfect excuse to cook up some more!COOKING METHOD: Campstove, Grill, Campfire
2. Slice apple into about ⅓" thick slices. (You want to keep them a bit thick to add a nice crunch and notable flavour). Set aside.
3. Shred cheese and set aside.
Heat the grill or skillet:
1. Turn on the grill or stove to medium heat. If using a cast-iron or frying-pan, place on top and allow it to heat up while you assemble your quesadilla. *Note: you can cook directly on the grill top (a pan is not required)
Assemble the Quesadillas:
1. Sprinkle about ¼ cup on one half of each tortilla shell. Leave some space around the edges for melting.
2. Disperse about half an apple worth of slices on top of the cheese.
3. Bacon time! Layer strips on top of the apple.
4. Sprinkle another ¼ cup of cheese on top of the bacon.
5. Fold the bare side of the shell over to contain the toppings, creating a half-moon shape.
Cook the Quesadillas:
6. Grill or pan-fry until slightly charred or golden brown, flip and repeat on other side (about 3 minutes per side). Quesadilla is ready when both sides are golden and cheese is melted.
