Garlic Parmesan Zucchinis

Zucchinis? Good. Garlic? Gooood. Parm? Goooooood. Perfect as a side dish, burger topping – or a snack!

Cooking Method: Campfire, grill

Cooking Time: 6-8 mins

Yield: 4

Ingredients:

  • 2 small or medium zucchinis
  • 2 garlic cloves
  • 2 tbsps olive oil
  • 4 tbsps parmesan or asiago cheese, grated

Directions:

  1. Pour olive oil into container. Mince garlic and add to oil. Let marinate.
  2. Slice zucchinis into 1/4″ thick strips or rounds. 
  3. Brush zucchinis with oil and garlic mixture. 
  4. Sprinkle with cheese
  5. Grill or cook over the fire for approx 6 minutes (med-high heat); until bottoms slightly charred and cheese is melted 

Voilà! Your Garlic Parmesan Zucchinis are ready to go!
