Bananas and salted caramel chocolate are simply amazing as a pair – but I figured it’d be even better to combine this duo with peanuts (or cashews) and coconut – another amazing couple! Aside from this trail mix being healthy (depending on the type of chocolate… and how much you actually put in muahah), it’s something different than the average mix. I love that it has a natural sweetness with a hint of salt and a delicious crunch.
You can simply buy all of these ingredients and combine them in a bowl – but if you have a dehydrator and can make your own banana chips, it’s certainly worth it. They’re way more flavourful and have a better texture.
You can also dehydrate your own coconut if you wish! (See directions below)
1. Slice 1 banana into 1/4″ thick slices; and 1/3 cup coconut meat into thin slices (approx 1/8″)
2. Dehydrate at 135° for approx 7 hours. Chips are done when no moisture excretes when squeezed.
Tip: it’s best to use ripened bananas (having a few brown spots on the peel). It results in sweeter, more flavourful chips.
3. Once bananas and coconut are dehydrated, combine with peanuts or cashews in a container, and voilà!
